FRUIT SALSA WITH CINNAMON-SUGAR TORTILLA CHIPS


Happy Monday! With the warmer weather approaching, here's a family favorite recipe that's sure to please. WARNING: HIGHLY ADDICTIVE!



FRUIT SALSA WITH CINNAMON-SUGAR TORTILLAS



FRUIT SALSA

1 large yellow pepper, diced  

1 large red pepper, diced

2 tomatoes, seeded and diced

1 ½ tablespoons garlic, minced

2 large peaches, ripened and diced

1 large mango, ripened and diced

1 small red onion, diced

1 teaspoon salt

2 limes, juiced

2 tablespoons cilantro, finely diced



CHIPS

10 (8”) round flour tortillas

6 ounces melted butter

           1/3 cup sugar

1 tablespoons cinnamon

PREHEAT oven to 325 degrees

Mix all salsa ingredients together and allow it to macerate for no less than an hour.

Blend cinnamon and sugar together. Set aside.

Using a pizza cutter, cut each tortilla into equal wedges and place on sheet pan. Brush melted butter over top and sprinkle with cinnamon-sugar mixture. Bake approximately 5 minutes, or until golden. Allow chips to cool--they'll crisp up in no time and you'll make a beeline for the salsa. Bon Appetit!
